In this tutorial we will explain how to make coffee or espresso with an Italian Moka machine!
First of all let’s show how a Moka machine looks like:

The Moka machine above is from the famous brand Bialetti that you can find pretty much all over the world.
Here are the few simple steps to follow:
1. Use good quality coffee, keep it in an hermetic box and not close to food with strong smells (like cheese or infusions).
2. Use fresh water and with no limestone. Don’t use hot water to cook the coffee faster.
3. Put water in the moka’s boiler until the valve (or eventually until the sign inside the boiler if there is one).
4. Put quite much coffee in the filter without pressing it with the spoon.
5. Close the moka strongly and put it on a low fire.
6. As soon as the coffee is coming out open the lid of the moka, to avoid the steam to condense and go back into the container.
7. Right before that all the coffee is out take away the moka from the fire to avoid the steam left in the boiler to come out. Never let the coffee boil on the fire!
N.B. Wash the Moka machine with water only. Don’t use any soap. If you didn’t use the Moka for a while or it’s new, make a couple of coffees with water only.

hi i am a food and beverage manager for a resort in india and our resort is situvated in a coffee estate i would like to push our coffee to our just through a moka machine.
i would like to know what is the grind size for the perfect coffee.
i have been trying for months and mostly the coffee is coming bitter i would like to know what arethe reasons for it …

In Italy with this kind of moka machines we usually use already roasted or already roasted and ground coffee. It comes usually in vacuum packed to prevent oxidation. Therefore I would guess that finely ground coffee is needed!
